I am a salty snack girl at heart but when I do want a little sweet treat after dinner I like something light and not overly sweet or leaving me with a stomach ache. These baked apples are super easy to make and reheat each night, but they also satisfy your sweet tooth with clean ingredients and I bet you already have most of the ingredients at home!!
What you’ll need:
2 Large honeycrisp apples
2 Tablespoons of pure maple syrup
1.5 Tablespoons coconut sugar
1 Tablespoon coconut oil
Cinnamon
½ teaspoon arrowroot powder (to thicken)
Dash of vanilla
Pinch of sea salt (tiny)
_________
How you’ll make it:
Slice your apples into even, thin slices so they cook uniform. Mix everything else into a bowl or measuring cup, I measure the cinnamon with my eyes just some dashes, and everything else can slightly vary as well. Mix this together to make a maple sauce to cover the apples. I use a baking dish and add in both the apples and sauce then mix until the apples are coated. Bake at 375 for about 30-40 minutes, stirring half way through to keep everything coated. Let them cool!!! The sauce will thicken, then serve up these maple baked apples in a bowl with some vanilla ice cream, greek yogurt or eat them as in, they don’t need much of anything else to enjoy!
