PROTEIN PACKED QUINOA SALAD

This salad is my favorite lettuce-less salad packed with protein, fiber, flavor and a little crunch. I really love to prep a large salad to keep in the fridge for the week so I have a healthy on hand side dish or quick lunch throughout a busy week.

What you’ll need:
1-2 cups cooked quinoa
1 bag shelled edamame
2 bell peppers
1 can white beans
½ jar of pickled onions
8oz of feta cheese
Handful of chopped pistachios 
Dressing:
½ cup olive oil
¼ cup white vinegar
1 squeezed lemon
2 TB of honey
salt, pepper, garlic powerasil
Dried or fresh basil
1 teaspoon dijion mustard

How you’ll make it:
Cook your  quinoa on the stove according to the package while you prep the rest. Grab a cutting board and chop your bell peppers, pickled onions, and roughly chopped pistachios then side all aside. Get a large mixing bowl ready and add in your white beans, bag of thawed out shelled edamame beans, cooked quinoa, 8 oz of crumbled feta then your chopped veggies of peppers, onions and pistachios. In a smaller bowl, add all the ingredients to the dressing and whisk vigorously or pulse with emersion blender. Once combine you can pour over the salad and toss until everything is coated evenly. Refrigerate or enjoy immediately!
