SALTED GOOEY DATE COOKIE
When developing this cookie recipe I had in mind quality ingredients. These cookies are indulgent, rich, gooey & sweet but have cleaner ingredient staples like high quality organic flour, coconut sugar instead of a refined sugar & minimal other add ins to make these a better for you more natural version of a traditional chocolate chip cookie.
What you’ll need:1 ½ cups unbleached organic flour
1 stick butter, softened
⅔ cup coconut sugar
1 egg
½ tsp baking soda
½ tsp salt
¾ cup dates, pitted + finely chopped
1 cup dark chocolate chunks
Flaky sea salt
How you’ll make it:Soften the dates: Cover chopped dates with hot water for 5–10 minutes. Drain extremely well and pat dry.
Mix wet: Cream softened butter + coconut sugar + egg.
Add dry: Stir in flour, baking soda, and salt until just combined.
Fold in: Gently mix in the softened dates and dark chocolate chunks.
Chill: Refrigerate dough for 30 minutes.
Bake: Scoop into uneven balls for a chunkier cookie and bake at 350°F for 9–12 minutes, until edges are lightly golden and centers still look soft.
Finish: Immediately sprinkle with flaky sea salt and let cool on the baking sheet for 5ish minutes.
