CELERY DATE SALAD
This is my favorite salad to throw together that’s perfectly layered with a lot of flavors, textures and topped with a quality homemade dressing. Although it’s quite easy to make it can be the star of the show or a versatile side dish for any dinner.
What you’ll need:
5 oz arugula
5–6 celery stalks, thinly sliced on a bias
8 Medjool dates, pitted, thinly sliced
6 oz white cheddar cheese, cut into small cubes
½ cup pumpkin seeds
Lemon-Shallot Dressing
⅓ cup good-quality extra-virgin olive oil
3 tbsp fresh lemon juice
1 tbsp honey
1 tiny garlic clove, finely grated
1 small shallot, very finely minced
½ tsp kosher salt
freshly cracked black pepper
How you’ll make it:
Add the arugula, chopped celery, dates, white cheddar, & pumpkin seeds to a large salad bowl.
In a small jar, shake together the olive oil, lemon juice, honey, garlic, shallot, salt, and pepper until well combined. If you have time I refrigerate mine overnight for deeper flavor.
Pour the dressing over the salad just before serving and toss gently until everything is lightly coated.
