THE BEST CUCUMBER SANDWICHES
I am happy to share with you this extremely simple, yet refreshing & bright cucumber sandwich, the way I make & serve them. These go over perfectly at any event with light bites & treats or as a backyard snack anytime of the week.
What you’ll need:
A fluffy bread loaf (you can use white, wheat, any bread you like but traditionally these go over well with a simple white fluffy bread. Cream cheeseFresh DillEnglish cucumber (has to be english) Preferably a mandolin for slicing________
How you’ll make them:
Before making these sandwiches bring the cream cheese to room temp by leaving it out for about 30 minutes. While you’re waiting, you can start chopping your cucumbers, I prefer to use a mandolin to get the cucumber slices even and perfectly thin to layer in your sandwich. Lay the cucumber slices out on a paper towel to absorb some of the moisture and place a layer of paper towels on top as well, lightly press down to draw out that water and let it sit for a few minutes between the paper towel. You can also prep your bread here depending on the shape you’re going for, you can use a cookie cutter to make different shapes, or you can shave off the crust using a serrated knife for soft edged sandwiches. Either way is fine just make sure you serve these without crust for the best cucumber sandwich. Next, finely chop a few tablespoons of fresh dill, place into a mixing bowl & add in your cream cheese. Fold until you have a well combined dill cream cheese mixture. (You can eyeball this recipe based on how many sandwiches you’re making). Grab two slices of bread and place a generous but evenly spread amount of cream cheese mixture on both sides! Layer your cucumbers slightly overlapping on the bread until the whole slice is covered in cucumbers. Close the sandwich and cut into your desired shape or serve whole.
