DILL PICKLE PASTA SALAD
I think I have just created the most perfect, tangy and fun summer side dish. If you’re a pickle lover and prefer side dishes over the mains then this is the perfect dish for you, and it’s not going to last on the table long. I love anything and everything pickle but since creating this dill pickle creamy pasta salad it is the solution to any cookout, backyard bbq “what do I bring moment”, its not just the typical pasta salad, it brings conversation to the group and also wows your taste buds, if you make anything this summer, make it this!
What you’ll need:
16 oz pasta
8 oz sharp cheddar
1 ½ cups of dill pickle juice
16 oz jar of baby dill pickles
1 cup plain greek yogurt
½ cup mayonnaise
¼ cup fresh dill
Garlic powder, onion powder, black pepper

How you’ll make it:
Start by cooking your pasta, then draining it and setting aside to cool. For the best texture I like to have cheddar cubes for different flavor dimension so I cut an 8oz block of cheddar cheese into tiny squares, as well as chopping the pickles into small pieces and chopping the fresh dill and adding that all into a large bowl. Add to the bowl the pickle juice, greek yogurt, mayo and seasonings to taste. Mix this all together well before adding the pasta so it’s a creamy and textured sauce, then add in the pasta and mix until all the pasta is covered and saucy. I let mine sit for a few hours or overnight, stir before serving and check to see if you need to add another spoonful of greek yogurt or pickle juice to loosen it up a bit!
