LOADED BAKED POTATO GNOCCHI

Who doesn’t love a good fluffy baked potato!? I love mine with butter, probably a gross amount of sour cream, then a touch of fresh black pepper & salt, that is the ultimate easy side for me which is how I was inspired for this dish. I wanted to elevate a traditional baked potato into something sheet pan worthy that gave all the elements of a loaded baked potato but a bit more convenient and a lot quicker to make. This is a side dish (or a main) that nobody is going to leave behind & I can guarantee will be requested again!

What you’ll need:
1 package of potato gnocchi (can be cauliflower gnocchi)
1- 8oz package of uncured bacon
White cheddar cheese
Chives
Sour cream
Salt/pepper/garlic powder/onion powder

How you’ll make it:
Preheat your oven to 375. Line a baking sheet with parchment paper for easy clean up. Start by dumping one package of  gnocchi onto half of the sheet, drizzle olive oil and add on your seasonings generously. On the other side of your baking sheet place and separate your bacon, I chopped mine before hand so they were in small pieces to cook faster and evenly. I then sprinkled about 1/4 cup of cheese lightly over the gnocchi before placing into the 375 degree oven for 35 minutes. While its cooking you can chop up some fresh chives. At 35 minutes you can take it out of the oven and add another 1/4-1/2 cup of shredded white cheddar to the top of the gnocchi and place back into the oven (that is off) just to melt the cheese on top. Once that’s all melted and your bacon is looking slightly crispy you can take out and assemble. To a plate start with your base of gnocchi and bacon, followed by chives and a dollop of sour cream! You can add more toppings to load it up how you like but I am telling you this was an absolutely AMAZING potato dish!
